(Dec. 20, 2003) Cascade Grill House & Spirits at Teton Mountain Lodge & Spa will offer a no-holds barred New Years Eve dinner this Wednesday night featuring dishes such as pan-seared lobster, roasted tenderloin of buffalo and range-fired breast of pheasant.

Diners will be treated to a four-course meal of appetizer, salad, entre and dessert, making their selections from a range of New Western-influenced creations by Executive Chef Chad Luethje. Diners over 21 will also receive a glass of champagne. Cascade Grill House & Spirits New Years dinner will take place from 5:30 to 10 p.m. The evening costs $85 per diner, and reservations are strongly advised.

Along with a spring mix of exotic baby lettuces and a house salad, the menu includes appetizers such as Napoleon of grilled portobello mushroom, wild west potato blinis, Rocky Point vanilla shrimp and carpaccio of cold-smoked bison.

Roasted Tenderloin of Lodge Buffalo

Range-Fired Breast of Pheasant
Caramelized shallot and kiln-dried cherry jus
Roasted corn and asparagus risotto
Medley of seasonal vegetables

Fire-Grilled Vegetable Risotto
Seasonal Copper Canyon Farms squash, red peppers, asparagus, wild mushrooms, Reggiano parmesan shavings,
Italian white truffle oil
