New Teton Mountain Lodge & Spa executive chef brings extensive culinary experience from restaurant posts at Utah resorts, spas

TETON VILLAGE, Wyo. (Feb. 5, 2007) -Adding culinary experience from several Utah mountain resort and spa operations, Jackson Hole's Teton Mountain Lodge & Spa hired Jay Corcoran as executive chef at Cascade Grill House & Spirits. Corcoran will direct the menu at the Lodge's New Western-influenced restaurant and bar, which is located slopeside at Jackson Hole Mountain Resort.

In the past seven years, Corcoran worked in a number of chef roles at the Zermatt Resort & Spa in Midway, Utah, Promontory - The Ranch Club in Park City, Park City Mountain Resort, and the Stein Erikson Lodge in Park City. He also worked as a PGA Tournament Chef at Castle Pines Golf Club in Castle Rock, Colo.

At his most recent post at the Zermatt Resort & Spa, Corcoran managed an operation serving 352 rooms and condominium units, overseeing a staff of 45 in two venues with 28,000 square feet of banquet space. In his job at Park City Mountain Resort, Corcoran assisted with a $4 million restaurant renovation. And at the Stein Erikson Lodge, he was part of a chef team that contributed to the Lodge’s restaurant earning the AAA 5-Diamond Award.

Corcoran holds a degree from the Culinary Institute of America in Hyde Park, NY. He will continue Cascade's Grill House's theme of emphasizing fresh ingredients, unique taste combinations, creative presentation and top-tier service. Cascade’s fare spans the range from beef and wild game to seafood, poultry and vegetarian dishes. The menu is changed seasonally to keep the selection fresh. The emphasis is on obtaining the highest quality ingredients and letting natural flavors shine through.
