The Cascade menu combines sophisticated, fresh flavors with western style. Chef Kevin Humphreys brilliantly incorporates seasonal local ingredients with free range, hormone free and grass fed game as well as beef and wild seafood. Chef Kevin's creativity extends to the new breakfast, lunch and dinner menus as well.

Smoked Trout Salad ~ boston bibb lettuce, radish, coruton and mustard dill dressing

Buffalo Shortribs ~ Zonker Stout braised, organic Grits, swiss chard and Onion Marmalade

Butternut Squash and Celery Root Gratin ~ mushrooms, spinach, goat cheese and ancho carrot sauce

All Natural Free Range Chicken ~ Creminis, smoked paprika, asparagus and parsnip potato puree
